How to make easy stuffed dinner rolls made with fresh milled flour

Make the filling

For cheeseburger filling, cook your onions and ground beef. Season with salt, pepper, onion powder, garlic powder, and/or any seasonings of your choice. When it’s done cooking, transfer to a plate to cool.

Make the dough

Using the 60-minute dinner roll recipe, make the dough for the rolls.

Divide

After you’re done kneading your 60 minute dinner roll dough, oil your work surface and remove the dough from your mixer. Divide the dough into 12 equal portions. I like to divide my dough into 3 equal balls and then using my dough scraper, divide each ball into 4 parts. This gives you 12 rolls. If using American cheese in your rolls, take 6 slices of cheese. Stack them on top of each other. Cut them in half vertically and horizontally. This will give you 24 cheese scares.

Stuff

Working on a lightly oiled surface, take one of the twelve portions of your dough and flatten it unto a 5-inch circle with your hands or rolling pin. Fill your dough with about 2 tablespoons of filling. If making cheeseburger rolls, put your cheese first. Use 2 of the 24 cheese squares in each roll. Then lay the ground beef mixture over top. Pull the edges of the dough in over the filling and pinch the roll closed. Flip the roll over so that it is now seam side down and smooth side up. Very gently glide the roll against the counter to tighten the dough and ensure that the seam is closed. Be gentle to ensure that you do not break a hole in the dough,

Rise

Repeat this with the remaining portions of dough. Transfer all of the stuffed rolls to a parchment lined baking pan. Cover the rolls with a lid or damp cloth so they do not dry out. Allow to rise until puffy. This can take 20-40 minutes depending on the temperature in your home. Preheat your oven to 375 while your rolls are rising.

To check if the rolls are done rising, gently poke a roll. If it leaves an indentation and doesn’t spring bake quickly, they’re ready to bake.

Bake

Bake your rolls in a preheated 375-degree oven for 20-25 minutes. While the rolls are baking melt 2 Tablespoons of butter (optional). When the rolls are done, the internal temperature should be 190 degrees and the tops should be nicely browned when done. Brush the tops of the rolls with the melted butter. Enjoy immediately!
