Waffles are a go-to breakfast in my home. These simple fresh milled sourdough discard waffles are quick to whip up in under 20 minutes and just a few simple ingredients. What I love most about these waffles is that they are crispy on the outside but chewy and light on the inside. They truly are the perfect sourdough breakfast waffle!

Ingredients
Fresh milled flour sourdough starter This recipe is very forgiving and will work with just about any fresh milled flour sourdough starter. Whether you feed your starter with hard wheat, soft wheat, einkorn, rye, kamut, etc, it will all work. Your sourdough starter can be discard or active sourdough starter. Just make sure your sourdough starter is established and at least 2 weeks old.
Eggs
Oil Coconut oil, olive oil, avocado oil and even melted butter all work well
Honey You can change this for any sweetener of your choice or leave it out entirely.
Baking soda
Cinnamon Optional
Salt
Vanilla extract Optional
Instructions
Add your sourdough starter to a mixing bowl. To that, add eggs, oil, honey, cinnamon and vanilla. Mix well with a whisk.
Now add in the salt and baking soda. Mix well. Once the baking soda is in, the mixture will become bubbly. This is normal.
Warm your waffle iron and cook according to your waffle maker instructions. For my waffle maker, they come out best when I do not oil or butter the waffle maker but if you’re using a cast iron or something that works better oiled, then be sure to oil your waffle maker before pouring in the batter.

do you think this would work for pancakes too? and 2nd question – do you think it would work with FM buckwheat flour? thanks! My grandsons are visiting and they love pancakes!

It does work for pancakes as well. And making it with buckwheat sourdough starter sounds wonderful. I do believe it will work well.
