Soft Fresh Milled Pizza Dough: A Perfect Canvas for Flavor
There’s something incredibly satisfying about homemade pizza, especially when it’s made with love and a touch of wholesome goodness. This Soft Fresh Milled Pizza Dough recipe is not only a healthier alternative to traditional pizza dough but also incredibly easy to make. With just a few simple ingredients, you can create a delicious canvas for your favorite toppings.
Whole wheat fresh milled flour adds a nutty flavor and hearty texture to this dough, making it a great option for those looking to incorporate more whole grains into their diet. The addition of honey adds a subtle sweetness that complements the earthiness of the whole wheat flour perfectly. This dough is also incredibly versatile and can be used for traditional pizzas, calzones, or even as a base for flatbreads.
One of the best things about this recipe is that it can be prepared ahead of time and stored in the refrigerator overnight. This not only allows the flavors to develop but also makes dinner preparation a breeze.
I enjoy making pizza in cast iron pizza pans. You can find the pizza pans listed here.

To make Soft Fresh Milled Pizza Dough, you’ll need:
1 14inch Pizza Dough
- 275 g Hard White wheat BERRIES 1&1/2 cup
- 206 g Water 3/4cup + 2 Tablespoons Room temperature
- 4 g Olive oil 1 Teaspoon
- 14 g Honey 1 Tablespoon
- 6 g Salt 1 Teaspoon
- 4 g Instant yeast 1 Teaspoon
Instructions
Mill your wheat berries. While that is milling, mix water, oil, and honey in mixer bowl. Then add fresh milled flour to the mixer bowl.
Mix on speed 2 for 3-5 minutes or until all the flour is incorporated. Cover with a damp cloth and let rest for 20 minutes.
After 20 minutes add yeast and salt and knead for 8-10 minutes.
When it’s done kneading, put dough in lightly oiled container, cover and let rise until doubled in size.
Once the dough has doubled in size, deflate the dough. If making more than 1 pizza divide your dough. Then shape into ball and let rest covered for 30 minutes. This gives the dough time to relax which makes it easy to flatten.
After the dough is done resting, gently put it on an oiled pizza pan or parchment paper if using a pizza stone. Oil the top of the dough and flatten the dough into a 14in circle. Top with desired toppings. Let pizza rest for 15 min while the oven preheats to 450F. Bake for 15-18 minutes or until desired color is achieved. Enjoy!
How to freeze
This dough freezes very well! After the dough is done kneading, oil a freezer safe bag, shape your dough into a ball and place the dough into the bag. Freeze up to 3 months.
How to that soft fresh milled pizza dough
Remove the dough from the freeze the day before and place into the fridge. The next day, remove the dough from the fridge. Shape it into a ball. Allow to rest covered at room temperature for 2 hours. Now proceed with putting your dough onto your oiled pizza pan and continue with preparation instructions.

This recipe is excellent! Easy to make, and results are delicious!
Absolutely delicious recipe! Also, how well does this dough freeze if it does at all? Thank you!
Hi Vanessa,
So happy to hear that you enjoyed the recipe. This dough freezes very well. I freeze immediately after kneading in oiled freezer safe bags. First divide the dough and then put into freezer bags and put into the freezer immediately. To thaw, I take it out of the freezer the day before I’d like to use it.
I’m all out of hard white. Can I use soft white?
Hi Libby,
I do not recommend soft white for this recipe. Hard red wheat would be a great replacement.
Do you ever partake the crust? Looking for makeahead options to speed up baking several at a time.
Hello!
I don’t par-bake but you totally can. I think thats a great idea especially for children to be able to make their own pizzas.
We are fairly new to fresh milled flour and are really enjoying the recipes on this site. We just made this pizza dough recipe and UGH…. AMAZING! Easy to follow instructions. So worth the time and effort. We loved it. We’ve made all purpose flour homemade pizza dough before, but there it no comparison to this! Our new favorite pizza dough recipe. Thank you, Monique!
This recipe is delicious!! Thank you so much for posting it!!! I have par-baked the crust for 5 mins and then added the toppings and froze them for an easy Friday meal for my kiddo crew to throw into the oven and they turned out amazingly!! Thanks again!!
