Instructions
 

  • Mill your wheat berries. While that is milling, mix water, oil, and honey in mixer bowl. Then add fresh milled flour to the mixer bowl.
  • Mix on speed 2 for 3-5 minutes or until all the flour is incorporated. Cover with a damp cloth and let rest for 20 minutes.
  • After 20 minutes add yeast and salt and knead for 8-10 minutes.
  • When it’s done kneading, put dough in lightly oiled container, cover and let rise until doubled in size.
  • Once the dough has doubled in size, deflate the dough. If making more than 1 pizza divide your dough. Then shape into ball and let rest covered for 30 minutes. This gives the dough time to relax which makes it easy to flatten.
  • After the dough is done resting, gently put it on an oiled pizza pan or parchment paper if using a pizza stone. Oil the top of the dough and flatten the dough into a 14in circle. Top with desired toppings. Let pizza rest for 15 min while the oven preheats to 450F. Bake for 15-18 minutes or until desired color is achieved. Enjoy!

*If doing the day before put the dough in the fridge after removing from the mixer and let rise slowly in the fridge. Punch down after it has doubled and keep in the fridge until next day.
