Ingredients
  

  • 150 g Fresh Milled Soft Wheat Flour 1 & ¼ cup
  • 8 oz Shredded cheese
  • 5 Tbsp Butter
  • 1 Tsp Salt
  • ½ Tsp Baking Powder
  • 2-3 Tbsp Water

Prepare the Ingredients

  • Start by milling your soft white wheat and shred your sharp cheddar cheese.

Mix the Dry Ingredients

  • In a food processor or stand mixer with a whisk attachment, add the fresh milled flour, salt, and baking powder. Pulse or mix briefly to combine.

Add the Butter

  • Cut the cold butter into small cubes and add it to the dry mixture. Pulse or mix until the mixture resembles coarse crumbs.

Incorporate the Cheese

  • Gradually add the shredded sharp cheddar cheese to the flour mixture. Pulse or mix until the dough starts to come together.

Add Water

  • Slowly add the water, one tablespoon at a time, until the dough stays together when squeezed in your hand. The dough should be soft but not sticky.

Chill the Dough

  • Wrap the dough in plastic wrap and refrigerate for about 30 minutes. Chilling the dough makes it easier to roll out and ensures a crispier texture. Although, I have successfully made these crackers many times without the 30 minute refrigeration.

Roll and Cut the Dough

  • Preheat your oven to 350°F. On a floured surface, roll out the dough to about 1/8-inch thickness. Use a pizza cutter or cookie cutter to cut the dough into small squares or shapes. Using a fork or chopstick, poke each cracker.

Bake the Crackers

  • Place the cut crackers on a parchment-lined baking sheet. Bake for 12-15 minutes, or until the edges are golden brown.

Cool and Serve

  • Allow the crackers to cool on a wire rack before serving. They will continue to crisp up as they cool.
