As a mom of eight, I’m always on the lookout for recipes that are not only delicious but also nourishing for my family. This easy banana bread with fresh milled flour and a hint of warming spices, has become a staple in our home.
I often whip up this recipe for my eight children, and it’s a wonderful feeling to see them enjoy something made from scratch with so much love. For a healthier twist, I sometimes omit the sugar altogether, letting the natural sweetness of the bananas shine through. It’s a fantastic way to keep snack time both healthy and satisfying!

Ingredients for this easy banana bread with fresh milled flour
Ripe bananas This recipe is a great way to use up old bananas that have gotten dark and mushy
Soft white fresh milled wheat flour Einkorn and spelt work great as well
Eggs
Baking soda
Baking powder
Salt
Kefir/Buttermilk Either of these adds moisture and a slight tang to the bread, enhancing its flavor profile and tender crumb.
Butter you can also use oil in place of butter
Cinnamon The addition of cinnamon and cardamom adds a delightful warmth and depth to the banana bread, making it perfect for a cozy morning breakfast or a comforting afternoon snack.
Cardamom optional
Vanilla extract
Sugar The sugar can be reduced or increased to your liking. You can even omit it all together.
Walnuts optional
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
In a large mixing bowl, combine the mashed bananas with the melted butter and kefir (or buttermilk). Mix well until smooth.
Add the eggs and vanilla extract, stirring until everything is well incorporated.
In another bowl, whisk together the freshly milled soft white wheat flour, baking soda, baking powder, salt, cinnamon, sugar and cardamom.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
If you’re using walnuts, fold them into the batter now.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Can I make the banana loaf with spelt flour?

This recipe works wonderfully with spelt. Einkirn works great as well.
Good morning, I am wondering if I replace the sugar with honey or maple syrup, would I also change the liquid ratios?

No need to change the liquid ratios for the liquid sweeteners.
This banana bread is divine. Belle said that you could omit the sugar which would make it even healthier. I only added 1/2 cup sugar and it is plenty sweet for us. I did increase the walnuts as my husband loves them. I will definitely be making this frequently.
Wonderfully crafted recipe
I’m not a fan of banana bread but my family loves it. This recipe converted me. It has a crispy top but is moist and has incredible flavor. My daughter that usually doesn’t like FMF recipes loved it. Definitely a new staple in our home.
