  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
    In a large mixing bowl, combine the mashed bananas with the melted butter and kefir (or buttermilk). Mix well until smooth.
    Add the eggs and vanilla extract, stirring until everything is well incorporated.
    In another bowl, whisk together the freshly milled soft white wheat flour, baking soda, baking powder, salt, cinnamon, sugar and cardamom.
    Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
    If you’re using walnuts, fold them into the batter now.
    Pour the batter into the prepared loaf pan and smooth the top with a spatula.
    Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
    Let the bread cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Notes

For a healthier twist, I sometimes omit the sugar altogether, letting the natural sweetness of the bananas shine through. It's a fantastic way to keep snack time both healthy and satisfying!
